Tasting notes:
Nose: A surprisingly mineral start on the nose for this age. Normally these notes have worn off over the years, especially with the 21yo, but here... Warm peach cake, dried apricots, juicy nectarines, plus that typical, very engaging mineral note. Wow, fun. A little citrus juice, white pepper and chervil, maybe even a hint of peat smoke. This is finally a really fine, very original Springbank nose.
Palate: And the appearance on the tongue is hardly inferior to the one on the nose. Oh no, he's just as good. Wonderfully mineral, very creamy, mouth-filling. Creamy toffee, caramel and honey, apricots, peaches, nectarines, spicy wood that hints at peat and smoke. Feels thick on tongue; a wonderful interplay between moist pebbles and fruit aromas. Wine gum, lime slices, some pineapple.
Finish: Long, long and long again. I can't remember a 21yo that has stuck to the palate like this. If it weren't so nice, you'd have to call it penetrance.
