Nose: Delicate, fresh. On the first nose, notes of cut grass, green tea and rice bring to mind a very distinguished sake. Allowed to breathe, mint, lemongrass and jasmine notes fragrance the air. After this, the aroma palette becomes more aniseed and malty.
Palate: Creamy, silky. Revealing flavours of bamboo shoot, cress and rhizome, the attack is deliciously aquatic. The mid-palate is a delicious pretext for tasting courgette flower tempura. Almond milk coats the taste buds.
Finish: Long, serene. The spicy (cardamom, star anise) and herbal (thyme, sage) start of the finish gives its own take on the milky end to the palate, adding pistachio notes. The very well-balanced end of the palate is salty (aster), fresh (chlorophyll) and liquoricey.
