Nose:Ohw yes, farmy, lactic and cheesy immediately. Not so much directly smoky, but dry and burning grasses are there with an earthy kind of peat, Old Amsterdam cheese, slight notes of tar. Then sweetness from the sherry cask kicks in with sultana raisins, plum, figs and blackberry, even some sour citrus. Also toffee, chocolate, roasted nuts, sweet tobacco and salted black liquorice. Clove and a milder style of (fried) chili peppers appear in the background.
Palate:Creamy (almost buttery or greasy) in the mouth with initially lots of drying wood smoke and chili pepper notes up front. Gotta tame this baby carefully with a little water and some time, bringing out more of the sweet fruitiness. Sultana's, sweet berries, dried fig, plum and lemon zest. The salted liquorice shifts to the front when keeping this in the mouth longer with the cheey farmy notes, dry tobacco, cocoa butter and roasted nuttiness following suit. The final development gives clove, chili's and some bitter charcoal and ashiness.
Finish:Very long with a nice complexity: a bit sour (citrussy) with dark berries and sweet dried fruits, lots of black liquorice, tobacco, dark chocolate, some espresso and charred wood. In the end it's very much warming on fried peppers with some bitter ashiness lingering on the tongue.
