Nose:Very ripe, slightly grassy (also towards tobacco) and the previously typical strawberry note, old-ripened but present smoke, something tingling in the nose, jam-sweetness and gooseberry, vanilla and a little caramel, fresh wood and a lot of tannins, the sherry cask has A lot of work has been done, but the bourbon barrel content quickly emerges and becomes dominant. Almost a perfect Kilchoman in terms of smell.
Palate:First full of wood and smoke, really oaky, dark chocolate and leather, heavy peat smoke, apricots, old wall unit and very dry. Water tames the wood a little and makes it creamier and subtly fruity with a little fig. Wow, there's a bit too much oak in the taste for me.
Finish:Long and very dry, ashy smoke, lots of oak and 80% cocoa chocolate. Maybe a touch of gooseberry but hardly any fruit at all. Luckily it's not too bitter - just at the limit. Water doesn't change the smell, but it is recommended to reduce the influence of the wood.
